Recipe after the break<\/p>\n

Ingredients:<\/p>\n

1 brick wrapped in foil<\/p>\n

1 chicken
\nFresh herbs : thyme, oregano, chives, rosemary
\n3 cloves garlic
\n1\/2 cup olive oil<\/p>\n

Preheat Oven to 400\u00b0
\nSoak chicken in water with salt and pepper for 2 hours or more.
\nCut backbone out of chicken
\nRemove wingtips
\nRemove herbs from stems and chop
\nMix herbs, garlic and olive oil
\nSeparate skin from chicken and put some herb mixture between skin and meat
\nSpread the rest all over the chicken
\nHeat frying pan on high and add a couple of turns of olive oil
\nPlace chicken in pan breast side down
\nPut brick on chicken to weigh it down on the pan
\nReduce heat to medium high and cook for 20 minutes, turning the pan after 10 minutes to cook chicken evenly<\/p>\n

After 20 minutes, turn chicken over in pan and place pan in oven for 10 minutes<\/p>\n

Let chicken rest for a few minutes and cut chicken into serving sizes. <\/p>\n

Serve with some vegetables, a salad and a fine beer.<\/p>\n
